Refreshing Noodle Salad


Saturday morning. Papa was up early. We must go pick up the bulk of different grill meat we ordered from our meat shop. A supply for maybe three months. Oh yeah, it's barbecue season!

The kids wont budge though. They wanted to stay at home and play. Papa drove alone. When he came back after more than two hours (meat shop is around 45 mins away from our place), he told me, 'Oops, we brought a lot. The freezer is so full.'

Well, I told him, 'good. Then we can start grilling them today.' Now, what would be our side dish?

As our green salad is not yet good for harvest, and I am too lazy to fight the crowd of shoppers this weekend, I chose to make Noodle Salad. What we usually call 'Macaroni Salad.' I had to prepare it early as it is best to be served cold.

Noodle Salad

Ingredients:
2 cups noodles, cooked (you can use macaroni, soup noodles, etc.)
1 cup pineapple chunks
3/4 cup cheese, chopped (cheddar or other hard cheese)
1 tbsp mayo
1/2 cup all purpose cream
2 tbsp nuts, chopped (you can use cashew, hazelnuts, almond, etc)
salt and pepper to taste
1/2 cup cherries, seeds removed

Preparation:
1. Cook the noodles according to package instruction. Drain.
2. Mix all ingredients together in a big salad bowl, leave some cherries on the side.
2. Put in ref. Before serving, top with the rest of the cherries. Serve cold.

Variation: Add chopped apples, chopped pickles, chopped bell peppers, strawberries, etc -- according to your taste.

Since the noodle salad is served cold, this is really a refreshing addition to the barbecue meal. Better serve a portion, and refresh the salad bowl when needed. Or else it would get spoiled easily.

I cant wait for our 'early' dinner!
